Week Night Jambalaya

So I decided I would share the new recipe I made tonight because it was so quick & easy and just plain delicious. And lets face it, who doesn't like quick, easy & delicious on a busy work night.

Let's start off with the list of ingredients you will need.

  • 1 package (14 oz) sausage, sliced into 1/2" slices
  • 1 onion, diced
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 3 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1-1/2 cups chicken broth
  • 1 teaspoon creole seasoning
  • 1 teaspoon chili powder
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 cup white rice (uncooked)

Add the sausage, onion, bell pepper,  celery & minced garlic to your instant pot . Saute for several minutes until the veggies start to soften.  Once everything looks like it's nice and cooked , add your diced tomatoes,  chicken broth, Creole seasoning,  chili powder,  soy sauce, Worcestershire and uncooked rice and mix everything well. Close the lid with the vent in the sealed position and cook on manual high for 8 minutes .  When the time is up, do a quick release of your pressure and enjoy. 

Just a side note, since we like things "spicy" at our house, the next time we make this my plan is to use hot links and maybe add some cayenne pepper .  In any case, no matter how you like it, enjoy!
